Preservation for Beginners

This class will give a brief overview of four different preservation techniques: freezing, drying, canning, and pickling; including the basic chemical and biological principles behind each technique. Then the rest of class time will be devoted to demonstrating good canning and pickling practices. A handout will be provided with basic recipes and further reading.
